Going Bananas

Normally, I would say that muffins are glorified cupcakes, minus the icing. Except when it comes to these muffins. These Banana Chocolate Chip muffins are pretty healthy and have become my go to for quick and family friendly treats.  They also happen to be really flavourful, thanks to the extra ripe bananas.  Enjoy.

Banana Chocolate Chip Muffins

Makes 12

Ingredients:

1 cup whole wheat flour

3/4 cup oat flour (you can blitz your oats in a blender, if you don’t have any on hand)

3/4 cup ground flaxseed

1/4 cup dark chocolate chips

1 1/2 tsp baking powder

1 tsp baking soda

2 tbsp cinnamon

3-4 really ripe bananas (approximately 1 1/2 cups)

3/4 cup brown sugar

3/4 cup milk (you can substitute for any non-dairy milk)

1 egg

Instructions:

  1. Preheat oven to 400 F.
  2. Line 12-cup muffin pan with paper cups
  3. In a large bowl, mix together the dry ingredients: whole wheat flour, oat flour, ground flaxseed, chocolate chips, baking powder, baking soda and cinnamon.
  4. In a medium bowl, beat together all the wet ingredients: mashed banana, brown sugar, milk and egg. Mix until well combined.
  5. Pour the wet ingredients into the dry ingredients and mix until combined.
  6. Scoop into muffin cups and bake for 20-25 minutes, until done.
